Gluten free & flourless chocolate cakes
1. In a bain-marie
Place chopped chocolate in a heatproof bowl set over a pan of barely simmering water; the base of the bowl should not touch the water. Stir occasionally.
2. In a microwave
Place chopped chocolate into a non-metallic, heatproof bowl and microwave in 20-30-second bursts, stirring gently between each blast.
3. In the oven
The method favoured by chocolatiers. Preheat the oven to a very low heat - 50°C. Spread the chocolate over a parchment-lined baking tray and melt for 10-15 minutes.

A buyer's guide
When you see a percentage such as ‘70% cocoa’ on a bar of chocolate, that’s the total amount of cocoa in the bar - a combination of cocoa butter and cocoa powder (solids).
Dark chocolateThis has the highest cocoa percentage of all chocolate. Use 70% cocoa for cooking - it’s great in savoury dishes.
Milk chocolateSweeter than dark chocolate, this is made with milk and has fewer cocoa products. Aim for 35%-50% cocoa if you’re cooking with it, or try using half-milk, half-dark.
White chocolateWith vanilla notes, white chocolate contains no cocoa powder and is usually made from cocoa butter, milk powder and sugar.
