Pastry weights

Also known as baking beans these are small ceramic or metal shapes used to weigh down pastry in a flan tin when baking it blind (without a filling). Dried beans or peas work just as well as ceramic or metal shapes. Simply line the pastry case with greased baking parchment and then place the shapes or beans on top.
