Bamboo shoots

These, as the name suggests are the young edible shoots of different varieties of bamboo plants. Waitrose sell canned, sliced and peeled bamboo shoots in water which are very similar to the fresh variety. Canned bamboo shoots are pale yellow in colour and have a crunchy and almost fibrous texture and add a distinctive crunch to a variety of savoury dishes.

Uses:
Bamboo shoots are a popular addition to stir-fries and are widely used in Chinese and Japanese recipes.

To store:
Keep in a cool, dark place. Once opened transfer any unused shoots to an airtight container, store in the fridge immersed in cold water, which should be changed daily, and use within 3 days.

To use:
Rinse thoroughly in fresh water before use. Canned bamboo shoots are peeled, sliced and cooked so can be added straight to stir-fries and Oriental dishes at the end of the cooking time just to heat through.
