Lime leaves

Freeze dried lime leaves are available with herbs and spices. They come from a tree native to South East Asia and the leaves and the fruit zest are used in cookery. The leaves have a distinctive lime aroma and add a citrus flavour to sweet and savoury dishes.

Uses: Lime leaves are especially popular in chicken and fish dishes. They can also be added to sauces, puddings, cream and custards. Add a couple of leaves to long, cool drinks for a delicious lime flavour.

To store: Keep in an airtight jar, in a cool, dark place for up to 1 year.

To use: Lime leaves are used in a similar way to bay leaves - add them at the beginning of the cooking time and remove and discard just before serving.
