Seaweed

Crispy seaweed
A familiar dish in western Chinese restaurants, crispy seaweed is actually deep fried shredded spring greens seasoned with salt and sugar. It is sold in ready-to-eat packs.

Uses: Sprinkle over any Chinese-style savoury dish to add a crispy texture and a dark green colour.

To store: Keep in a cool dark, dry place for up to 3 months.

To use: Crispy seaweed can be served hot or cold. To heat, place the contents of the pack in an ovenproof dish and heat at 180°C, gas mark 4 for 3 minutes.
