Almond Cream with Fresh Fruit

Ingredients

  • 284ml carton extra thick double cream
  • 500g Greek strained yogurt
  • 4 tbsp icing sugar, plus extra to garnish
  • 1 tsp almond extract or 2 tbsp almond liqueur
  • 300g fresh fruit, such as apricots, cherries, peaches or blackberries
  • Mint leaves, to garnish

Method

  1. Stir the cream and yogurt together until combined. Sift in the icing sugar, sprinkle on the almond extract or liqueur and stir in. Divide the mixture between six ramekins or small dishes and chill until needed.
  2. Meanwhile, wash the fruit, and destone and slice it as necessary. Just before serving, scatter the fruit over the almond cream, dust with a little icing sugar and garnish with mint leaves.

I made this dessert last night and all our guests loved it - we did too. I halved the amount of icing sugar on the recipe, as when adding the sugar and tasting it for sweetness I thought that the full amount would be too sweet for our liking. The result was wonderful. I topped ours with raspberries, strawberries and blackberries and served them in large wine glasses - they looked amazing. Will definitely make again and if you want an easy, light but amazingly delicious dessert then you can't go wrong with this recipe.
