Baked blue cheese sweet potatoes

Serves: 2
500g Waitrose Duchy Organic Sweet Potatoes
50g Waitrose Duchy Organic Cropwell Bishop Blue Stilton, crumbled (selected stores)
50g walnuts, roughly chopped
50g Waitrose Duchy Organic Onion Marmalade
2 tsp chopped thyme
3 tbsp fresh breadcrumbs
1. Preheat the oven to 200°C, gas mark 6.
2. Place the sweet potatoes on a shelf in the oven, and bake for 30-40 minutes until tender. Allow to cool slightly.
3. Halve the potatoes and scoop out some of the flesh, leaving a 1cm border around the edges.
4. Mix the Stilton, walnuts, onion marmalade and thyme into the potato flesh, and spoon the mixture back into the shells. Place on a large baking tray and sprinkle over the breadcrumbs. Place under a preheated grill for 1-2 minutes until golden. Serve with a green salad.
