Baked salmon with spicy cabbage

Salmon fillets baked in the oven on a bed of spicy cabbage. Meat free with a nice spicey kick.

Ingredients

  • 2 50gm (30gm drained) tins of anchovy fillets in extra virgin olive oil
    4 Large garlic cloves – finely chopped
    2 Red chillies. Cut in half lengthwise, seeds removed. Finely sliced.
    1 Red pepper. Cut in half. Seeds and pith removed. Finely sliced.
    100ml Fish stock
    1 Cabbage. Use what’s good in season. Need about 500-700gm - can be more or less. Remove outer leaves, coarse stalk and shred finely.

Method

  1. Use large oven-proof dish. Arrange anchovy fillets in bottom and sprinkle chopped garlic, chillies and pepper over them. Pile cabbage into dish without mixing. Arrange salmon fillets on top, skin side down. Sprinkle oil from anchovies over dish. Bake in oven at 180C for 30-40 mins. When salmon & cabbage cooked, remove salmon from top of cabbage and set to one side. Mix up underlying layers. Check seasoning. Replace fish & serve at table with mashed potato or rice.
