Black Forest cheesecake

  • Total time: Ready in 15 minutes, plus chilling 15 minutes

Serves: 4-6


125g pack Waitrose Seriously Triple Chocolate Biscuits
40g butter, melted
1 x Waitrose Seriously Rich Black Forest Tall Cake, sliced lengthways
100ml double cream
200g tub essential Waitrose Creamy Soft Cheese
25g icing sugar
½ x 425g can essential Waitrose Black Cherries in Light Syrup, drained and halved
½ tsp cocoa


1. Break the biscuits into a food processor and pulse to make breadcrumbs. Stir in the butter and press into an 18cm round loose bottomed tin. Arrange the cake slices on top of the biscuit base. Allow to chill. the lemon curd and top with the remaining slices of cake. Dust with icing sugar and serve.

2. Meanwhile, whisk the cream to soft peaks then whisk in the soft cheese and icing sugar. Stir in the halved cherries. Spoon on top of the cake and chill for 1 hour. Dust with cocoa and serve.
