Cabbage slaw for Heston's Slow-cooked pulled pork recipe

Ingredients

225g finely sliced white cabbage
100g peeled and grated carrot
Zest of 1 lime
Juice of 3 limes
35ml white wine vinegar
15g white caster sugar
5g salt
1 green chilli, finely chopped
5g coriander leaves

Method

1. Mix together the prepared cabbage and carrot in a bowl. Add the lime zest, juice,vinegar, sugar, salt and chilli and stir to combine.

2. Chop the coriander leaves and add to the slaw. Check the seasoning before serving.
