    LOVE life chick pea & houmous koftas with Greek salad

    Serves: 4

    Ingredients

    400g can essential Waitrose Chick Peas, drained and rinsed
    125g essential Waitrose Houmous
    1 essential Waitrose Romaine Heart, sliced
    4 essential Waitrose Tomatoes, diced
    ½ essential Waitrose Cucumber Portion, diced
    50g pitted black olives, halved
    2 tbsp extra virgin olive oil
    1 tbsp essential Waitrose White Wine Vinegar

    Method

    1. Soak 8 wooden skewers in water for 15 minutes.

    2. Meanwhile, place the chick peas and houmous in a food processor and pulse to a coarse paste. Divide into 8 and mould onto the wooden sticks. Place under a preheated grill for 3–4 minutes each side, turning gently with tongs.

    3. Meanwhile, toss together the romaine, tomatoes, cucumber and olives in a large bowl. Whisk the oil and vinegar together and toss into the salad. Serve topped with the koftas.
