Chicken & avocado fajitas

Ingredients

350g pack essential Waitrose British Chicken Mini Breast Fillets
1 tsp olive oil
2 Waitrose 1 Perfectly Ripe Avocados
Pinch dried chilli flakes
Juice of ½ lime
4 wholewheat flour tortillas
2 tbsp Waitrose Tomato Salsa
2 tbsp fat free Greek yogurt
Rocket leaves, to serve
 

Method

1. Preheat the grill to high. Season the chicken and toss in the oil, grill for 5-6 minutes, each side, until thoroughly cooked and there is no pink meat.

2. Meanwhile, roughly mash the avocado with the chilli flakes and lime juice, then season. Grill the tortillas for a few seconds on each side until just warm.

3. Spread the avocado over the tortillas. Divide the chicken between them, top with the salsa, yogurt and rocket leaves. Roll up to serve.
