Chilli pasta with mature Cheddar

This pasta is mixed in with a chilli made with kidney beans, onions and chilli powder. The pasta is topped with grilled and melted mature Cheddar cheese before serving.

Ingredients

  • 454g pack Waitrose Duchy Organic British Beef Mince
  • 1 Waitrose Duchy Organic Onion, chopped
  • 2 tsp Cooks’ Ingredients Organic Chilli Powder
  • 400g can Waitrose Duchy Organic Chopped Tomatoes
  • 400g can Waitrose Duchy Organic Kidney Beans, drained and rinsed
  • 150ml organic vegetable stock
  • 250g Seeds Of Change Organic Semi-Wholewheat Tortiglioni Pasta
  • 75g Waitrose Duchy Organic Mature Cheddar Cheese, grated

Method

  1. Fry the mince and onion for 3-4 minutes to brown. Stir in the chilli powder, and cook for 1 minute.

  2. Stir in the tomatoes, beans and stock, and cook gently for 10-15 minutes.

  3. Meanwhile, cook the pasta in boiling water for 10 minutes, or until tender. Then drain, stir into the chilli and season. Transfer to an ovenproof serving dish, sprinkle with the cheese and place under a preheated grill for 2-3 minutes until golden.
