    Chilli Bean Tacos With Grated Cheddar

    Simple to make and delicious to eat, this is a great self-assembly dish - children will enjoy filling their own taco shells.

    • Cooking time: 25 minutes
    • Total time: 35 minutes 35 minutes

    Serves: 4

    Ingredients

    • 1 tbsp sunflower oil
    • 1 onion, chopped
    • 3 courgettes, diced
    • 400g can Biona Organic Mixed Beans, drained and rinsed
    • 400g can Waitrose Chopped Tomatoes
    • 1 tsp Schwartz Cajun Seasoning
    • 20g pack fresh flat-leaf parsley or coriander, chopped
    • 135g pack Discovery Taco Shells
    • 100g Waitrose Grated Medium Cheddar
    • 200g pack Waitrose Fresh Dip Guacamole

    Method

    1. Heat the oil in a large saucepan and cook the onion and courgette for 5 minutes until golden and softened.
    2. Add the beans, tomatoes and Cajun seasoning, bring to the boil and simmer gently, covered, for 20 minutes, until reduced and thickened. Check for seasoning and stir in the herbs. Spoon into a large serving bowl.
    3. Pile the taco shells on a plate and place on the table with the grated Cheddar and guacamole, ready for the children to help themselves.

    Cook's tips

    The bean mixture can be made ahead and is suitable for freezing. Don’t season, and leave to cool before adding any herbs.
    To reheat, add a splash of water and gently warm in a pan until piping hot. Season to taste.
