    Classic Welsh rarebit

    Turn cheese on toast into something very special simply by melting Cheddar with mustard, ale and a dash of Worcestershire sauce. This is a meal on its own when made with thick sliced bread and by adding a piece of ham before spreading the rarebit sauce 

    • Preparation time: 10 minutes
    • Cooking time: 3 minutes
    • Total time: 13 minutes

    Serves: 4

    Ingredients

    225g Anchor Extra Mature Cheddar Cheese, grated
    25g Country Life Butter
    2 tsp English mustard
    1 tsp Worcestershire sauce
    2 tsp plain flour
    4 tbsp Duchy Originals From Waitrose Organic Golden Ale
    4 slices Warburtons Toastie Thick Sliced White Bread
    1 tbsp fresh chopped parsley
     

    Method

    1. Make the rarebit sauce: mix all the ingredients except the bread and parsley in a saucepan and heat gently until the cheese has melted and the sauce is smooth and just beginning to bubble. Allow to cool slightly.

    2. Meanwhile, toast the bread on one side, spread the untoasted side with the rarebit mixture and place under a preheated grill for 2-3 minutes until golden and bubbling. Serve sprinkled with parsley and a glass of the remaining ale.
