Curried Mince with Chickpeas

Ingredients

1 onion
500g pack Waitrose Lean Mince Beef
4tbsp Veeraswamy Gujarat Masala
400g can chickpeas
400g can essential Waitrose Chopped Tomatoes
Basmati rice
Chapattis
Yogurt
Chopped coriander

Method

1. Peel and chop 1 onion and soften in a large pan in a little oil. Turn the heat up and add 500g pack Waitrose Lean Mince Beef. Cook for about 5 minutes, breaking the meat up as you go.

2. Spoon in 4 tbsp Veeraswamy Gujarat Masala, stir through the mince, cook for 1–2 minutes, then pour in a drained 400g can chickpeas in water, and a 400g can essential Waitrose Chopped Tomatoes in natural juice. Swill the tomato can with about 100ml water, add to the pan, then simmer for 20 minutes.

3. Serve with basmati rice, warm chapattis and yogurt, garnished with freshly chopped coriander.
