Dressed rice with sesame, pickled cucumber & ginger salad

Serves: 8 as a side

Ingredients

300g brown rice
3 tbsp Cooks’ Ingredients Japanese Rice Vinegar
2 tbsp toasted sesame oil
25g pack chives, finely sliced
1 cucumber, deseeded and diced
105g pack Clearspring Sushi Ginger, drained
4 salad onions, finely sliced
1 tbsp Cooks’ Ingredients Black Sesame Seeds, toasted 

Method

1. Cook the rice according to the pack instructions. Drain (if necessary) and rinse under cold running water until cool.

2. Tip the rice into a large bowl and stir in the rice vinegar, sesame oil and chives.

3. Toss half of the cucumber, ginger and salad onions with the rice and season.

4. Top with the remaining ingredients, finishing with the black sesame seeds.
