Ingredients

  • 3 Braeburn apples, cored and diced
  • 100g butter, softened
  • 100g caster sugar
  • 2 Waitrose Duchy Organic British Free Range Medium Eggs, beaten
  • 100g self-raising flour
  • Ice cream, to serve (optional)

Method

  1. Preheat the oven to 180˚C, gas mark 4. Put the apple pieces in a saucepan with 50ml water and cook, covered, for 3-4 minutes until softened. Transfer to a large, shallow ovenproof dish, about 25x17cm.

  2. Meanwhile, beat the butter and sugar together until pale and fluffy using an electric hand mixer. Beat in the eggs 1 at a time, then gradually fold in the flour. Spoon the mixture over the apples and bake for 30-35 minutes until risen, golden and cooked throughout. Serve with ice cream, if liked.
