Fig, Goat's Cheese and Lamb's Lettuce Salad with Basil Oil

  • 2 tbsp pesto
  • 1 tbsp olive oil
  • 2 Capricorn Goat's cheeses
  • 2 x 40g lamb's lettuce
  • 1 fig


  1. Mix 2 tbsp pesto with 1 tbsp olive oil. Halve 2 Capricorn goat's cheeses and grill, cut side up, until bubbling.
  2. Arrange the contents of 2 x 40g bags lamb's lettuce on 4 plates. Add a piece of hot cheese and a quartered fig to each plate. Drizzle with the pesto oil and serve.
