You can make these with any soft fruits – try strawberries or kiwis.
2 shots Bacardi Superior Rum
1 shot lime juice
2 tsp caster sugar
Half a peach, peeled, stoned and chopped
1 peach slice
Whizz the ice, rum, lime juice, sugar and chopped peach in a blender until slushy. Pour into a chilled martini glass and garnish with the peach slice.
You can cheat by using tinned peaches, or substitute Funkin White Peach Bellini Cocktail Mixer for the fresh peach and sugar.
