Glazed chicken with peppers

3 mixed peppers

6 chicken thigh fillets

1 tbsp vegetable oil

¼ tsp dried crushed chillies

1 tsp cornflour

2 tbsp Cooks’ Ingredients Hoisin Sauce

1 tbsp light soy sauce

Nodles (to serve)


  1. Preheat the oven to 220°C, gas mark 7. Deseed a pack of 3 mixed peppers and cut into small chunks. Chop a pack of 6 chicken thigh fillets into bitesized pieces and toss in a roasting tin with 1 tbsp vegetable oil and ¼ tsp dried crushed chillies. Add the peppers and roast for 25 minutes. Make sure the chicken is cooked through with no pink meat.
  2. Blend 1 tsp cornflour with 1 tbsp water. Stir in 2 tbsp Cooks’ Ingredients Hoisin Sauce and 1 tbsp light soy sauce and pour into the tin. Mix well and return to the oven for 10 minutes until the sauce has thickened. Serve with noodles.
