Goodwill guacamole and home-made tortillas

Serves: 10
10 avocados, halved
3-4 limes
2 clementines
2 red chillies, deseeded and finely chopped
½ tsp ground cinnamon
QUICK TORTILLAS
8 seeded tortilla wraps
4 tbsp olive oil
1 tsp sweet smoked paprika
1 tsp cumin seeds
1. Preheat the oven to 200˚C, gas mark 6. For the tortillas, cut each wrap into small triangles and scatter over a couple of baking trays (you don’t want to crowd them or they won’t crisp up). Drizzle with the oil and sprinkle over the paprika, cumin seeds and a good pinch of sea salt. Bake for 10 minutes, until crisp.
2. Meanwhile, scoop the avocado flesh into a bowl. Grate in the zest of 2 limes and 1 clementine and add the juice from all the limes and both clementines. Add a good pinch of salt and a grinding of pepper along with the chilli and cinnamon. Roughly mash the whole lot together, taste and adjust, adding more lime, salt and chilli to taste. Serve the guacamole with the tortillas and some crudités, if liked.
