Griddled chicken with lemony new potatoes

Ingredients

450g essential Waitrose new potatoes

4 essential Waitrose British chicken breasts

2 tsp olive oil

½ tsp chilli flakes

2 leeks

3 salad onions

Zest of 1 lemon

5 basil leaves

Method

  1. Cook 450g essential Waitrose new potatoes in a pan of boiling water for 12 minutes.
  2. Meanwhile, halve 4 essential Waitrose British chicken breasts horizontally. Heat a griddle pan until very hot. Brush the chicken with 2 tsp olive oil, scatter with ½ tsp chilli flakes and griddle for 6–8 minutes on each side – you may have to do this in batches.
  3. Add 2 leeks, thinly sliced, to the potatoes and cook for a further 5 minutes. Drain, then stir in 3 salad onions, sliced, the zest of 1 lemon and 5 basil leaves, torn. Serve the chicken with the potatoes and leeks on the side, and a green salad if liked.
