Heston's Earl Grey sour
50g Heston from Waitrose Earl Grey & Lemon Gin
25g pink grapefruit juice
13g Waitrose British Blacktail Free Range Egg (white only)
13g simple syrup (equal parts water and sugar)
3 dashes peach (or Angostura) bitters
Place the ingredients in a cocktail shaker filled with ice. Shake vigorously for 20 seconds, then strain into an ice-filled rocks glass. Garnish with a grapefruit twist.
