Jacket potatoes with houmous

2 essential Waitrose Baking Potatoes
150g essential Waitrose Houmous
1 essential Waitrose Carrot, grated
1 essential Waitrose Courgette, grated
1. Preheat the oven to 200°C, gas mark 6. Pierce the potatoes with a fork several times and microwave on full power for 5-7 minutes. Transfer to the oven and cook for 20 minutes or until cooked throughout.
2. Meanwhile, mix the houmous, carrot and courgette together and season with black pepper.
3. Halve the potatoes and top with the houmous mixture. Serve with salad.
