Lemon chicken with couscous salad

Ingredients

100g Love Life Giant Wholewheat Couscous
240g pack Waitrose Tomatoes, Mozzarella & Pesto, drained, reserving 1 tbsp oil
1 tbsp white wine vinegar
2 tsp green pesto
50g baby spinach, shredded
220g pack Waitrose 2 British Garlic & Lemon Roast Chicken Breast Fillets
 

Method

1. Cook the couscous in boiling water for 7-8 minutes or until tender. Drain well and cool. Mix in the drained tomatoes, mozzarella and pesto with 1 tbsp of the drained oil, vinegar and green pesto. Stir in the spinach and season to taste.

2. Slice each chicken breast fillet and serve on top of the salad.
