Lentil, spinach and pepper balti

300g essential Waitrose Basmati Rice
1 tbsp essential Waitrose Vegetable Oil
1 essential Waitrose Onion, chopped
1 essential Waitrose Red Pepper, diced
1x ½ x 200g jar Cooks’ Ingredients Balti Curry Paste
400g can essential Waitrose Lentils, drained
400g can essential Waitrose Chopped Tomatoes
250g pack essential Waitrose Spinach
1. Boil the rice for 10–12 minutes then drain.
2. Meanwhile, heat the oil in a large frying pan and fry the onion and pepper for 4–5 minutes.
3. Stir in the balti paste, lentils and chopped tomatoes and cook for 1 minute. Add the spinach and heat until wilted.
4. Serve with the rice.
