Oysters make a great start to a celebratory meal. Here they are given a South American flavour, with lime and a hint of Tequila.
Margarita Oyster Shots
24 fresh Scottish oysters
Plenty of ice, for serving
Zest and juice of 4 limes
3-4 tbsp white tequila, to taste
20g pack fresh coriander, chopped
2 tbsp extra virgin olive oil
- Carefully open, or shuck, the oysters (visit waitrose.com/howto for a video clip that shows you how to do it). Then run a knife underneath the flesh of the oysters to detach them from their shells. Leave the oysters in the shells and place them on a bed of ice in a dish or platter.
- To make the margarita dressing, mix together the remaining ingredients in a small bowl. Spoon a little dressing over each oyster and serve immediately. Place any remaining dressing in a small serving pot.
To prepare the dressing in advance, mix together the zest and juice of the limes, tequila and extra virgin olive oil in a small bowl, then chill in the fridge until needed. Add the coriander just before serving, to keep its colour.
