Margarita oyster shots

Oysters make a great start to a celebratory meal or party. Here they are given a Mexican flavour, with lime and a hint of Tequila.

  • Christmas

24 fresh oysters
Plenty of ice, for serving
Zest and juice of 4 limes
3-4 tbsp white tequila, to taste
20g pack fresh coriander, chopped
2 tbsp extra virgin olive oil

  1. Carefully open, or shuck, the oysters (visit waitrose.com/howto for a video clip that shows you how to do it). Then run a knife underneath the flesh of the oysters to detach them from their shells. Leave the oysters in the shells and place them on a bed of ice in a dish or platter.
  2. To make the margarita dressing, mix together the remaining ingredients in a small bowl. Spoon a little dressing over each oyster and serve immediately. Place any remaining dressing in a small serving pot.

Cook's tips

To prepare the dressing in advance, mix together the zest and juice of the limes, tequila and extra virgin olive oil in a small bowl, then chill in the fridge until needed. Add the coriander just before serving, to keep its colour.

  • Preparation time: Prepare 30 minutes (depending on your skill at opening the oysters)
  • Total time: 30 minutes 30 minutes

Serves: 8
