75g Waitrose Duchy
Organic Seville Orange Marmalade Thick Cut
2 tsp Waitrose Duchy
Organic Wholegrain Mustard With Honey
2 chicken breast fillets, approx 350g
200g pack trimmed fine green beans
2 tsp olive oil
2 tbsp toasted
flaked almonds
1. Preheat the oven to 200°C, gas mark 6.
2. Mix the marmalade and mustard. Make 3 slits in each chicken breast and place on a small baking tray. Spread over the marmalade and mustard mixture, and bake for 25 minutes or until the chicken is cooked through with no pink meat.
3. Meanwhile, cook the beans in boiling water for 3 minutes. Drain, and toss in the oil and almonds, and season.
4. Serve the beans topped with the chicken, pouring over any leftover juices.
