    Martha Collison's tiger bread topping

    A spectacular yet straightforward way to jazz up your loaf!
     

    Ingredients

    In addition to the ingredients for the crusty white loaf, you will need:
    ½ tsp fast-action dried yeast (or ½ x 7g sachet)
    ½ tsp caster sugar
    1 tsp toasted sesame oil (any oil will work but sesame has the best flavour)
    ½ tsp salt
    75g rice flour 

     

    Method

    1. Follow my recipe to make a crusty white loaf.

    2. While your bread is proving for the second time, make this topping. Mix together all the ingredients with 6 tbsp warm water, stirring until a thick paste forms.

    3. Allow the mixture to rest for at least 5 minutes, then use the back of a spoon to spread it all over the top of the bread. There’s no need to slash this loaf. Bake as above, covering the bread with foil part-way through baking if the top is colouring too quickly.
