Mediterranean vegetable terrine

1 tbsp essential Waitrose vegetable oil
750g bag frozen essential Waitrose grilled vegetable mix
1 tsp sweet smoked paprika
2 Waitrose free range eggs, beaten
25g pack fresh basil, shredded
75g essential Waitrose English mild cheddar, grated
100g bag essential Waitrose mixed salad
1. Preheat the oven to 200ºC, gas mark 6. Grease and base line a 450g loaf tin. Heat the oil in a large frying pan and fry the veg mix and paprika for 5 minutes.
2. Place half in a food processor and purée. Stir into the remaining vegetables with the egg, basil and ¾ of the cheese. Mix well then season.
3. Pour into the tin, sprinkle the remaining cheese on top, place on a baking tray and bake for 20 minutes. Allow to cool slightly before removing from the tin. Cut into slices and serve with salad.
