Mediterranean vegetable and mozzarella couscous

1 tbsp oil
500g frozen essential Waitrose Grilled Vegetable Mix
200g essential Waitrose Couscous
400ml boiling vegetable stock
2 tbsp sun-dried tomato paste
2 x 125g packs essential Waitrose Italian Mozzarella, torn
25g pack fresh basil, torn
1. Heat the oil in a frying pan and stir-fry the vegetable mix for 5 minutes.
2. Meanwhile, place the couscous in a bowl and pour over the boiling stock, stir and cover with clingfilm and leave for 5 minutes. Fluff up with a fork.
3. Mix the tomato paste into the vegetables then stir into the couscous along with the mozzarella and basil. Season to taste.
Typical values per serving:
21.1g protein, 6g fibre, 1 of your 5 a day per serving
