    Melon, Mint and Raspberry Crush

    Serves: 8

    Ingredients

    • Waitrose Tonic Water
    • 1 galia melon
    • ½ x 20g pack fresh mint,
    • 1-2 tbsp caster sugar
    • 300g pack Waitrose British Frozen Raspberries
    • 1-2 tbsp vodka

    Method

    1. Blend 1 ripe galia melon, deseeded, peeled and roughly chopped, in a food processor until smooth.
    2. Finely chop ½ x 20g pack fresh mint, stalks removed, and stir into the melon crush with 1-2 tbsp caster sugar, to taste.

    Cook's tips

    For a non-alcoholic version, leave out the vodka and just top up with lemonade, tonic or sparkling water.

    Serving tips

    To transport, pour the melon mixture into a plastic container, seal well and chill.
    Spoon 3-4 tbsp melon crush into each glass along with a few frozen raspberries (from 300g pack Waitrose British Frozen Raspberries). Add 1-2 tbsp vodka to each glass, then top up with Waitrose Tonic Water, and stir.
