Mexican quinoa bowl

Ingredients

1  Cup 3 colour quinoa blend. Cooked.
250g Aberdeen Angus 5% lean Beef, raw.
Smoky Steak Rub seasoning
1 Can, Mixed Beans
1 Avocado
1 Sweet Salad bag
Plum tomatoes
Vine Ripened Tomato Salsa
Grated Mature cheddar
Fresh Coriander

Method

1. Cook your quinoa as per instructions on the packet. Should take 20 minutes. 

2. Meanwhile, cook the Beef mince in a little coconut oil and add 1/2 tsp of Seasoning to the pan. Stir fry until browned. 

3. Fill your bowl with salad leaves, tomatoes, and some mixed beans, avocado etc. 

4. Add the quinoa, followed by the Beef mince, top with salsa, cheese and fresh coriander leaves and dinner is served! Simple as that.
