    Mexican scrambled eggs - huevos revueltos

    Ingredients

    4 essential Waitrose eggs

    1 red onion, finely diced

    2 tomatoes, diced

    1 green chilli, finely chopped

    ½ x 28g pack coriander, finely chopped

    2 tbsp light olive oil

    Method

    1. Heat the olive oil in a medium saucepan. When hot, add the onions and cook for 2-3 minutes.

    2. Add the remaining ingredients and stir constantly until the eggs have set. Serve immediately.
