Mini Rhubarb Crumbles

Serves: 6


  • 400g rhubarb, trimmed and sliced into 3cm pieces
    75 g caster sugar
    200g plain flour
    100g cold butter
    125g demerara sugar


  1. Preheat oven to 180, gas mark 4. In a bowl mix the rhubarb, 50ml cold water and the caster sugar together then deivide evently between 6 x 200ml ramekin dishes
  2. Sift the flour into a bowl, add the butter and rub in with your fingertips until the mixture resembles fine breadcrumbs. Stir in the demerara sugar.
