Minty Strawberries with Ginger Yogurt

Ingredients

400g essential Waitrose strawberries

½ essential Waitrose orange, juice

1 tsp caster sugar

8 mint leaves

1 ball Chinese stem ginger in syrup, finely chopped

200g essential Waitrose greek style natural yogurt

 

Method

1. Hull and halve 400g essential Waitrose strawberries and put in a large bowl. Mix with the zest and juice of ½ essential Waitrose orange, 1 tsp caster sugar and 8 mint leaves, shredded. Allow to marinate for 10 minutes.

2. Meanwhile, finely chop 1 ball Chinese stem ginger in syrup and stir in to 200g essential Waitrose greek style natural yogurt. Divide between 4 glasses and chill.

3. Gently crush the strawberries with a potato masher. Spoon over the ginger yogurt to serve.
