LOVE life Mushroom omelette muffins

Olive oil spray
250g chestnut mushrooms, sliced
4 medium eggs
2 Duchy Originals from Waitrose organic wholemeal muffins with seeds and oats
2 Waitrose classic vine tomatoes, sliced
1 x ½ x 50g bag Waitrose wild rocket


1. Spray a large non-stick frying pan with oil and cook the mushrooms over a mediumhigh heat for 2-3 minutes until golden.

2. In a medium bowl, beat the eggs, then pour into the frying pan. Cook the omelette for a few minutes on each side – reducing the heat halfway through – until set.

3. Split the muffins and toast. Cut the omelette into 8 wedges and arrange 2 wedges on top of each toasted muffin half with the tomatoes and rocket.
