Olive oil spray
250g chestnut mushrooms, sliced
4 medium eggs
2 Duchy Originals from Waitrose organic wholemeal muffins with seeds and oats
2 Waitrose classic vine tomatoes, sliced
1 x ½ x 50g bag Waitrose wild rocket
1. Spray a large non-stick frying pan with oil and cook the mushrooms over a mediumhigh heat for 2-3 minutes until golden.
2. In a medium bowl, beat the eggs, then pour into the frying pan. Cook the omelette for a few minutes on each side – reducing the heat halfway through – until set.
3. Split the muffins and toast. Cut the omelette into 8 wedges and arrange 2 wedges on top of each toasted muffin half with the tomatoes and rocket.
Health experts say that many of us could benefit from eating more eggs. Research shows that eating one or two eggs a day has no effect on most people’s total cholesterol levels. A medium egg contains less than 70 calories, is a source of many vitamins and minerals and is rich in protein. There is evidence that consuming a diet that is high in protein may help you feel fuller for longer and therefore stick to your diet because you feel less hungry.
