My Genoan Minestrone

A hearty tasty Italian soup that is wonderful hot or cold. Lasts for several days

Why should your recipe win?
I think its one of the most healthy and easy to create dishes. It tastes delicious and combines vegetable tastes in a wonder way. It is also very cheap and lasts up to 4 days(actually improves by the day)

Ingredients

  • For the soup
    500 gr curly kale, woody stems disposed
    300 gr courgettes in cubes
    200 gr green beans, each in three pieces
    240 gr tinned borlotti beans
    1 carrot in cubes
    2 celery stems finely chopped
    1 large onion finely chopped
    1/2 cup light olive oil
    2 pints of chicken stock
    salt and pepper
    2 cups De Cieco stellete pasta

    For the fresh pesto
    50 gr fresh basil
    20 gr pine kernels
    4 garlic cloves
    1 cup parmesan cheese
    1/4 cup extra vergin olive oil

Method

  1. Drizzle deep pan with light olive oil. Sweat onion for 2 min, add carrot & celery for 3 min. Add kale leaves. Simmer with lid on for 8-10 min.Add green beans, stir for 2 min. Add chicken stock, bring to boil and reduce heat to minimum. Season, cook for 2 hrs. Toast pine kernels and blitz with basil,garlic, half of parmesan and oil for pesto.Add pasta and borlotti to soup.When cooked take off heat and add pesto and rest parmesan. Stir.
