Noddle Soup

Nice and easy far east soup


  • 1 pack large prawns/2 chicken breasts cut into strips
    ginger, chopped garlic,1 stalk of lemongrass, healthy pinch of chilli flakes, lime juice
    chicken or vegetable stock
    rice noodles
    spring onions
    half a bunch of fresh coriander
    any veggies available (mange tout, mushrooms, pak choi)


  1. Stirfry the prawns/meat in a wok with the ginger and garlic, adding a splash of soy sauce & lime juice to taste. Top up with hot stock and add the lemongrass & chilli flakes. chop and add the veggies. Thrown in the rice noodles to cook. Top with chopped spring onions & coriander & serve hot.
