One-Tray Sausages With Butternut Mash

Sausage and mash may be a family favourite, but why not try this wonderfully colourful alternative that tastes just as good. You’ll save on washing up too, as everything is cooked on a single tray in the oven.

Ingredients

  • 2 x 400g packs Waitrose Lincolnshire Pork Sausages
  • 1 large butternut squash, about 1kg
  • 1 tbsp finely chopped fresh rosemary
  • 4 cloves garlic, peeled

Method

  1. Preheat the oven to 200°C, gas mark 6. Place the sausages on a large oven tray measuring about 33cm x 36cm.
  2. Using a large sharp knife, cut the squash in half and scoop out the seeds with a teaspoon, then peel – it’s easier to peel when it’s cut in half. Cut into large chunks about 3-4cm in size. Place on the tray with the sausages, making sure that everything is in a single layer. Scatter the rosemary and garlic over the top and cover tightly with foil.
  3. Cook for 25 minutes. Remove the foil and increase the heat to 250°C, gas mark 9. Cook for a further 10 minutes or until the squash is tender and the sausages are beginning to colour
  4. Using a large spoon, remove the squash, garlic and any juices to a bowl. Return the sausages to the oven for another 5 minutes. Meanwhile, use a potato masher to mash the squash until smooth. Season to taste and keep warm.
  5. When the sausages are browned to your liking, remove them from the oven. Serve with the mash, a dollop of seasoned Greek yogurt and green beans.

To save time preparing fresh squash, use Waitrose Frozen Prepared Butternut Squash.

The photo looked so delicious that I served the squash as it is cooked - in chunks- and the family think it is great

Absolutely delicious, this dinner made me very happy last night. I used a fork to mash up the squash, which gave it a more rustic appearance and texture. Enjoy!
