    Pancakes with rum and lime baked bananas

    Serves: 4

    Ingredients

    Whipped cream for serving
    Butter
    2 shots of rum
    Dark brown sugar
    2 limes
    4 peeled bananas

    Method

    1. Preheat the oven to 220C, gas mark 7. Cut 4 peeled bananas in half lengthways and put into a gratin dish. Sprinkle with the zest of 1 lime and the juice of 2, plus a little dark brown soft sugar. Pour on a shot or two of rum and add a few small knobs of butter. Bake until soft, then grill for 3-5 minutes until bubbling and golden. Squeeze more lime over, add 2 tbsp rum and spoon on top of warm pancakes. Whipped cream is good on the side.
