    Pancakes with sauteed apples with toffee sauce

    Serves: 4

    Ingredients

    Crème fraîche or vanilla ice cream to serve
    Lemon juice
    A little light brown soft sugar
    3 granny smith apples
    3 tbsp double cream
    30g demerara sugar
    55g butter

    Method

    1. Melt 55g butter, 30g demerara sugar and 3 tbsp double cream in a saucepan; boil until it thickens slightly. Peel and core 3 granny smith apples, cut into thin wedges and cook in a frying pan with a couple of knobs of butter over a medium heat for 5-7 minutes until tender and golden on both sides. Add a little light brown soft sugar to help them colour. Squeeze over a little lemon juice and serve on warm pancakes with the sauce and crème fraîche or vanilla ice cream.
