1. Whizz the stale bread into coarse crumbs.
2. Heat some olive oil in a large frying pan then add the breadcrumbs, garlic, parsley, chives and chilli.
3. Cook for 2–3 minutes on a medium heat, stirring continuously until crisp and golden.
Any leftovers can be kept in a jar and sprinkled over salads or roasted vegetables.
