Parmesan and Herb Breadcrumbs


  • 1/2 clove garlic
  • 1 pinch thyme leaves
  • 1 pinch rosemary
  • 50g fresh Parmigiano Reggiano Parmesan, grated
  • 75g fresh breadcrumbs
  • 30ml olive oil
  • Salt
  • Freshly ground black pepper


  1. Place ½ clove garlic, a pinch of thyme leaves and a pinch of rosemary in a food processor and process for a few seconds. Mix with 50g fresh Parmigiano Reggiano Parmesan, grated. 75g fresh breadcrumbs. 30ml olive oil, salt and freshly ground black pepper to taste.
  2. Serve with grilled fish, sprinkle over salads or use as a topping for baked dishes. These Parmesan breadcrumbs freeze well.
