    Parmesan chicken with pea and bean mash

    3 tbsp breadcrumbs
    2 tbsp essential Waitrose Grated Parmigiano Reggiano
    2 essential Waitrose British Chicken Breast Fillets, halved lengthways
    50g essential Waitrose Baby Broad Beans
    75g essential Waitrose Garden Peas
    2 tsp chopped fresh mint
    1 tbsp essential Waitrose Mascarpone


    1. Preheat the oven to 200˚C, gas mark 6.

    2. Mix the breadcrumbs and Parmigiano Reggiano together with black pepper and use to coat the chicken. Place in a small roasting tin and bake for 25-30 minutes until golden and cooked through with no pink meat.

    3. Cook the beans and peas in boiling water for 5 minutes, drain and add the mint and mascarpone then lightly crush with a potato masher. Season to taste and serve the chicken with the pea and bean mash.
