Pasta with roasted squash and sweet potato

Ingredients

  • 350 g Waitrose Ready Diced Butternut and Sweet Potato
  • 1 large shallot, sliced
  • 2 tbsp extra virgin olive oil
  • 1 large sprig fresh rosemary, chopped (plus 1 for garnishing)
  • 1 - 2 cloves garlic, chopped
  • 50g Cornish Larder Mature English Goat's Cheese. diced
  • 25 g pine nuts, toasted
  • 250g fresh orecchiette or penne pasta

Method

  1. Preheat the oven to 220°C, gas mark 7. Toss the butternut squash, sweet potato and shallot with the olive oil, rosemary, garlic and seasoning. Place in a roasting tin in a single layer, then roast for 25 minutes, stirring once or twice, until tender and charred. Add in the goat’s cheese and pine nuts and toss to coat in the cooking juices
  2. Meanwhile, bring a large pan of water to the boil. Add the pasta and cook according to pack instructions until just tender. Drain, then toss with the roasted vegetables, check seasoning and serve with some grated goat’s cheese.

Cook's tips

For non-vegetarians add a 70g pack Waitrose Cubetti Di Pancetta to the roasting tin with the vegetables.

I found this too sweet for my taste, but it looked good on the plate, especially with the pancetta which I added for the non-vegetarians in the family. I don't think however that I will make it again but will use the goat's cheese with other recipes.

Actually, it was delicious! I did it with parmesan instead of the goat's. And the pine nuts got toasted in with the rest of the veggies. Slightly less pasta and it was just right for two.

This sounds nice, but I haven't made it yet. I have the printed version, and am irritated (as I often am!) by the requirement to add more cheese (grated) at the end which has not been included in the ingredients list. So then I come online to winge about that, and I see that the recipe here has omitted the amount of cheese (diced) required for the cooking part! So if you're following this one online, the amount of cheese (diced) is 50g. Clearly, you add whatever amount you want (grated) on top! I'm still going to make it because it sounds nice. More comments later!
