    Pea, mint and feta fritters

    You can't beat the flavour of peas eaten straight from the pod! This delicious recipe makes the most of fresh peas by teaming them with mint and feta cheese.

    Serves: 4

    Ingredients

    100g plain flour
    1 tsp baking powder
    ½ tsp cayenne pepper
    25g pack fresh mint, leaves only, chopped
    1 clove garlic, crushed
    Finely grated zest ½ lemon
    2 large Waitrose British Blacktail Free Range Eggs, beaten
    75ml semi-skimmed milk
    250g fresh podded peas
    2 salad onions, finely chopped
    100g feta, crumbled
    Olive oil, for frying

    Method

    1. Sift the flour into a bowl with the baking powder, cayenne and some seasoning.  Stir in the mint, crushed garlic and lemon zest and mix to a thick batter with the beaten eggs and milk.
    2. Blanch the peas in boiling water for 1 minute then refresh under cold running water. Drain thoroughly. Fold the peas into the batter with the salad onions and crumbled feta.
    3. Heat a thin layer of oil in a non-stick frying pan until almost smoking. Drop 4 separate spoonfuls of the mixture into the pan and cook for 2–3 minutes each side, until golden brown. Drain on kitchen paper and keep warm while you cook the remaining 4 spoonfuls. Serve with a mixed salad and Waitrose Tzatziki.
