    Pear & pecan overnight oats

    These bircher-style oats are quick and easy to prepare the night before

    • Preparation time: 10 minutes + overnight chilling
    • Total time: 10 minutes + overnight chilling

    Serves: 4

    Ingredients

    3 small pears, peeled, cored and coarsely grated
    1 tbsp lemon juice
    240g jumbo rolled porridge oats
    150g pecan nuts, roughly chopped
    200ml fresh apple or apple and pear juice
    175ml Waitrose Unsweetened Almond Drink
    50g Love Life Berry Mix
    4 tbsp natural yogurt and fresh pear slices, to serve

    Method

    1. Place the grated pear in a large bowl with the lemon juice, stirring to coat. Add the oats, 100g of the chopped pecans, the fruit juice and almond drink. Stir well, cover and chill overnight or for at least 6 hours.


    2. Stir in the berry mix and divide between 4 bowls. Top with spoonfuls of yogurt, the remaining chopped pecans and some fresh pear slices.

    Cook's tip

    This recipe is made using almond drink, but milk works well too. Or choose a dairy-free alternative to yogurt such as one made with coconut or soya.
